A revised European standard, what exactly has changed?
From July 2025, the new European standard EN 15780:2025 comes into effect. This replaces the old EN 15780:2011 and introduces important technical changes that directly affect the cleaning and maintenance of ventilation and kitchen extraction systems. 1. Specific guidelines for commercial kitchen extraction (Annex J)
The 2025 version now includes, for the first time, clear guidelines for commercial kitchen ventilation systems, including ventilation hoods, ducts, fans and carbon filters.

In concrete terms, this means that Hamster Cleaning can now assess even more precisely and safely when and how kitchen extraction systems need to be cleaned.
2. New Wiping Test for on-site checks (Annex K)
The standard also introduces a manual wiping test to check the cleanliness of ventilation systems on-site.

This method is just as reliable as the well-known vacuum test and provides a practical way to also assess stubborn contamination.
3. Adjustments in cleanliness levels and extraction ducts
The basic principles for cleanliness classes of air ducts largely remain the same:
For extraction ducts, the maximum acceptable dust load is now uniformly 9.0 g/m² for all quality classes, a clarification compared to the old standard.
4. Update in airtightness requirements
The new standard refers to EN 16798-3 for airtightness classes, ensuring better alignment with modern ventilation systems:
